Strawberry Yogurt Parfait

Sweet and fresh strawberry slices in creamy greek yogurt is naturally sweetened with raw honey. Almond slices, raisins and granola for sweet and crunchy surprises is a great way to start your day fresh or make any regular day extra special.

INGREDIENTS
1. Greek yogurt - 1 cup (divided)
2. Strawberries - 1/2 cup  (halved) or frozen
3. Honey or maple syrup - 1 tablespoon 

Toppings:
Strawberries - 8-10 nos
Granola - 3 tablespoons
Almonds (sliced) - 2 tablespoons
Raisins - 2 teaspoons 

More topping options:
Sliced bananas, blueberries, blackberries, kiwi, apples,  nuts (walnuts/pecans), chia seeds or Honey bunch oats.
 DIRECTIONS

1. Fresh Strawberry must be hulled* and cut into halves or quarters if big. 

2. Take half cup of these berries and blend it with half cup of greek yogurt and 2 tablespoons of honey. It takes just about 10-20 seconds until well combined. 

3. Now add the remaining yogurt to the same and gently whisk it. This helps retain the smooth creamy texture of the yogurt. 

4. Now refrigerate for about an hour or two. You may prepare this flavored yogurt day ahead like I did.*

5. Divide them into 2 containers of your choice or small mason jars works well too. Now add the toppings mentioned above or your favorites to enjoy.
  

NOTES AND TIPS

* Getting rid of the green top is called the strawberry hull. I have 2 methods for youto hull the strawberry the right way.
  1. Use just the tip of your pairing knife and go around the green part in an angle to take very little of the berry out as possibly as you can. 
  2. If you are using a straw, stick it at the bottom of the strawberry and put it all the way to the top to hull the berry. Now remove the extra leaves sticking on to it. 
* Fresh fruit blended yogurt should be eaten right away or at least within the next 2 days for the best flavor. So no preservatives are being added.

* You may make layers of strawberry yogurt with plain layer and add strawberry preserves for a colorful look. I chose to keep it simple and light with just 1.
