Coconut water Ginger Lemonade with Almond Pisin (Gum)

INGREDIENTS- For 2 servings
- Coconut water - 1 1/2 cups
- Lemon - 3 teaspoons
- Ginger Juice - 2 teaspoon or Ginger(grated) - 1 teaspoon
- Raw Honey - 2 tablespoons or Sugar - 2 teaspoons (adjust to your taste)
- Almond Resin or Gum/ Badam Pisin - 3 granules (used 6 tablespoons of bloomed)
- Water - 1 cup (to soak the almond gum)
- Mint leaves for garnish
1. Soak the Almond gum/ badam pisin in 1 cup water for 6 - 8 hours to bloom into a jelly like substance.
2. In a tall glass drop 2-3 ice cubes, lemon juice, ginger juice, honey, almond gum and pour in the coconut water. Give it a good stir or blend all these in a blender and serve immediately.
3. Garnish with mint leaves and or lemon slices if you desire.
NOTES AND TIPS
1. Soak the Almond gum/ badam pisin in water overnight to form a jelly like substance. Always use a large bowl as its volume multiplies 3-4 times. Separate and discard any amber colored resin. Refrigeration is recommended until use.
2. Mint leaves and or lemon slices can be used to garnish if you desire.
3. I added mint leaves to my ice tray for a decorative and flavored ice cubes. Try lemon zest to the same if you like.
