Fruit and Nut Roll

The festive season is almost here with all the sweet treats being prepared and shared. This Fruit and Nut Roll is an incredibly beneficial sweet treat that's rich in protein also acts as an energy bar/ snack. It's 100% natural! No added sugar, flavor or grease/buttering is required for this recipe, hence it's ideal for certain Vrat/ spiritual fasting.  You sure can roll this irresistible nectarous fruit and nut roll in a jiffy.




Obviously, dates is rich with vitamins and minerals hence consuming in morning is most beneficial for your health. It keeps your day energetic. From time to time, I replace my breakfast with this fruit and nut roll when in a rush. 



Use your favorite organic nuts and dried fruits readily available from your kitchen pantry, like I did. The moisture from the dates and figs help bind the roll well hence the proportion is slightly higher than the nuts. The combination of dry fruits and the crunchy nuts are so compatible with each other.

INGREDIENTS



Almonds slivered - 1/4 cup
Cashews -1/4 cup
Pistachios -1/4 cup
Walnuts - 1/4 cup
Pumpkin seeds -1/4 cup
Goji Berries - 1/4 cup
Cranberries - 1/4 cup
Raisins - 1/4 cup
Figs - 1/2 cup
Dates - 2 cups (pitted)
Sesame seeds - 1/2 cup as topping (roasted)

Cling wrap - optional
DIRECTIONS

1. Roughly chop the dried fruits and nuts separately using knife. I pulsed the dates in my blender in small batches*. 



2. In a wide pan on medium heat dry roast the nuts until the pumpkin seeds secrets its oil. Remove from heat.


3.In the same pan add the dried fruits except dates and dry roast for a min or two. Now add the dates and mix well for 2 more minutes. To this add all the nuts to combine well. 




4. Remove from heat when it cools to room temperature, roll it into a log and roll on a tray with roasted sesame seeds to adhere to the roll. 

5.Tightly wrap using a cling wrap and refrigerate for 2 hours to set. Slice and serve in room temperature. Store in an airtight/ vacuum sealed container. 








NOTES AND TIPS


  • Using a cling wrap holds the roll in place tightly to set firm.
  • Chop your dates roughly before you pulse them in your blender, to avoid them stuck to the bottom. Pulse the dates in small batches only.
  • Nut chopper works best to chop your nuts. If you don't own one like I do, simple use your chef's knife(large, with a tapered blade). Grasp the handle and place your other hand over the tip, then carefully rock the blade across the nuts until you get the desired sized slice.
