Stuffed Cucumber Cups

Presentation is key to any dish as we first eat with our eyes and so is the excitement. The crunchy cucumbers and the creamy tuna filling are a luscious treat for your taste buds.
Homegrown cucumbers were handed over by my friend and are recreated and relished with creamy tuna filling. A lavish dash of cajun seasoning and paprika gives these summer hors d'oeuvres a spicy kick. Some suggestions for vegetarians to opt for coleslaw, hummus, guacamole, and salsa.

INGREDIENTS
- Cucumbers (medium-sized) - 2 nos
- Tuna - 1 can
- Oil - 1 teaspoon
- White pepper (powder) - 1/2 teaspoon
- Onion Powder - 1/4 teaspoon
- Cajun seasoning - 2 dashes
- Dill (dried) - 1 dash
- Salt to taste
- Cream cheese - 2 teaspoons
- Garnishings - fresh rosemary with flowers and mustard microgreens (optional)
- Sriracha (hot sauce) - drizzle to your spice level
Tool required - apple corer or melon baller
DIRECTIONS
- Drizzle some cooking oil in a pan, toss in your chopped onions, and stir until translucent. Add canned tuna (drain the water completely), and sprinkle a dash of salt, pepper, onion powder, cajun seasoning, and dill to taste. Add a tablespoon of cream cheese and stir. Remove from heat.
- Prepare your cucumbers by slicing them into 2-inch chunks and core them using an apple corer or a melon baller that works just right.
- Scoop the prepared stuffing equally and sprinkle some cajun seasoning. I garnished it with homegrown rosemary along with its flower and mustard microgreens. Serve immediately or refrigerate until ready to serve.
NOTES AND TIPS
Prepare your cucumbers for about 2-3 hours, and keep them refrigerated if making for large groups. Peeling the cucumbers into stripes creates an exciting pattern, nevertheless it's optional.
