Guacamole Stuffed Cherry Tomatoes

"Tomates Rellenos" is tomatoes usually stuffed with arroz or rice, beef or tuna in Argentina, South America. I received a good quantity of freshly homegrown tomatoes from my dear friend and chose to make the best out of it. You can make these versatile cuties ahead of time and keep them refrigerated until ready to be served. To make it semi-homemade, simple buy the guacamole readily made and stuff your cherry tomatoes. These can be made a lot in a jiffy hence its perfect for any sized party. Most importantly, it makes a gorgeous presentation on your dinner or buffet table. You are sure to love them and make this a go-to recipe.


The smooth avocados mixture works well as a dip and for this stuffing, whereas I personally like them chunky for chip and tacos. INGREDIENTS
1. Avocado - 2 peeled, pitted and mashed
2. Lime juice - 1 no
3. Garlic Salt to taste
4. Onion - 1/2 cup (diced)
5. Fresh Cilantro - 3 tbsp (chopped)
6. Pickled jalapeno - 3 tsp (chopped)*
7. Spring onions - 1 sprig
8. Grated cheese - for garnish (used paneer)
9. Cherry tomatoes - 12 nos
DIRECTIONS
Cherry Tomatoes prep:
Cut the top of the cherry tomatoes and scoop out the insides*.  Place the tomatoes on a paper towel upside down to drain excess juice. 


Guacamole stuffing:
In a medium bowl mash the avocados with a fork or potato masher until smooth or chunk as per your preference. To this add the required garlic salt, diced onions, fresh cilantro, pickled jalapeno and lime juice.


Filling:
Using a piping bag or a ziplock trim off the tip of one corner for about a centimeter diagonally to pipe in the guacamole in your individual cherry tomatoes. You may simply scoop in the guacamole into the hollowed tomatoes using a tiny spoon as well. 

Garnish:
Sprinkle with thinly sliced spring onions and grated cheese on top of your stuffed tomatoes and serve immediately or cover with a cake lid to keep refrigerated until ready to serve.

NOTES AND TIPS              
Reserve the scooped out insides of your cherry tomatoes can be used for salsa making or simple add them to your pasta sauce or any gravy.

Homemade Guacamole can be saved in the refrigerator in an airtight container for upto 24 hours.
